Water Kefir is also known as tibicus, and Japanese Water Crystals. Water kefir is easily fermented in your home, to provide you with a regular supply of daily goodness. The crystals are a culture that ferment like the Kombucha, but you don't need tea bags and its much quicker to make and more pleasant to drink. You can add water, sugar and dried fruits and its ready to go.
A slice of fresh lemon makes it like lemonade, and makes it an alkaline drink. Add fresh chopped ginger root for ginger drink and you can even add herbs or spices to experiment with the flavours.

Your Water Kefir Crystals will grow enabling you to produce more drinks to share with friends. Use organic sugar and dried fruit. Keep your containers clean and drink after 1,2,3 or 4 days.
Don't leave it more than 4 days as it will taste sour. Look after your water crystals and they will last for a very long time.
Once your drink is ready you rinse the crystals with clean water, after removing and discarding the dried fruit. Drink, enjoy and/or bottle and store in your fridge.
Then your water kefir is ready to make another batch. It's like champagne, it will blow tops and lids off as the gas builds up. So when brewing your drink, cover your jar with a clean muslin cloth or a square of kitchen towel and secure it with an elastic band.

If you are going away you can rinse, and store your water kefir in the fridge. Best to use Lead Free non-toxic plastic container with good fitting led. I use Sistema Klip it containers. i
Plastic strainer (not metal) Glass jar
Kitchen towel and elastic band
Dried Figs, Goji Berries, raisins, apricots or sultanas
Organic sugar (not honey) brown sugar is good
Slice or two of fresh lemon (unwaxed)
(I like the Organic dehydrated Figs and Goji berries)
and good clean filtered water
Rinse your water kefir crystals and spoon into your chosen container. Use a plastic spoon, kefir doesn’t like metal. Dissolve the sugar in a little hot water, then cool by adding the rest of the water cold. Add about half a pint of water to start off with, increase this as your kefir grows.
With your sugar water ready add this to the kefir crystals in the jar, then drop in 3 or 4 dried figs, and a small handful of raisins or Goji berries and one or two slices of lemon, about half a lemon is nice.
Cover with square of kitchen told, secured by rubber band and it's done!
Leave it undisturbed for 2 or 3 days, then rinse and prepare fresh batch, same way. You can drink after 24 hrs but to have most of the sugar eaten leave longer, but not more than 4 days.
